Artichoke and Roasted Pepper Salad

A quick and tasty side dish

4 Portions

Cooking Time: 15 minutes

1-2 jars of Cucina d'Oro roasted peppers

2 cups of quartered artichokes

1/3 cup of sliced or pitted green olives

2 shallots, chopped

1 garlic clove, minced

½ tablespoon of lemon juice

2 tablespoons of olive oil

Salt and pepper (to taste)

1/4 cup of fresh parsley, chopped

1/4 cup of fresh basil, chopped

  1. Add all the ingredients into a bowl and mix well. 
  2. Serve when done, or for optimal taste, let the salad marinate in the refrigerator for a few hours.
