Chicken with Pesto and Bruschetta

Cooking Time: 35 minutes

4 Lbs, chicken breast

4 tablespoons, pesto

2 cloves, garlic (thickly chopped)

1 yellow onion, (half diced, half in wedges)

10 cherry tomatoes, diced

2 tablespoons, olive oil

½ cup, shredded cheese

Salt and pepper to taste

Fresh parsley

  1. Add the diced tomatoes, half a yellow onion (diced) and 1 tablespoon of olive oil to a mixing bowl. Garnish with fresh parsley and set aside in the refrigerator.
  2. Line a baking sheet with parchment paper and drizzle some olive oil onto the parchment paper.
  3. Add the chicken and coat with the remaining olive oil, garlic, salt, pepper, and onion wedges. Bake at 425 degrees for 20-25 minutes.
  4. Once ready, top with pesto, cheese, and bruschetta.
